Vegetable Soup

 

You Will Need

some of the vegetables growing in your garden, which may include:  CARROTS, POTATOES, TOMATOES, CAULIFLOWER, BEANS, BROCCOLI, PEAS, ONION, ZUCCHINI, SWEET CORN, SWEET PEPPERS, CELERY

  1. a wooden board

  2. a sharp knife

  3. a large microwave-safe casserole dish

  4. a wooden spoon

  5. boiling water and vegetable broth

  6. if you have a herb plot or herbs growing in containers, pick a handful of parsley and chives to add to your soup

What To Do

  1. Wash, peel, and chop the vegetables into bite-sized pieces. 

  2. Place ingredients into the casserole dish and just cover with the vegetable broth.

  3. Cover the lid.

  4. Cook in the microwave on HIGH (100% power) for about 15 minutes or until the vegetables are tender.

  5. Stir the soup once or twice during the cooking.

  6. Chop the parsley and chives.

  7. Stir the herbs into the soup just before serving.
