Peanut Butter & Jelly Cake

What You'll Need

  1. 1 store-bought pound cake
  2. 1/2 cup favorite fruit jelly (I recommend your own homemade strawberry jam)
  3. 1/4 cup creamy peanut butter
  4. 3 tablespoons unsalted butter or margarine, at room temperature
  5. 1 teaspoon vanilla extract
  6. 2 cups powdered sugar
  7. 1/4 cup soy milk

What To Do

  • Cut the pound cake in half in the middle
  • Spread the jelly evenly on the cut sides of the cake
  • Sandwich the two sides back together.  Set aside
  • Using an electric mixer, cream together the peanut butter and butter until light and fluffy
  • Add the vanilla and continue beating
  • Add the sugar and milk, a little at a time, and continue beating until smooth and spreadable
  • Cover the entire cake with the peanut butter frosting
