Carrot Soup

What You'll Need

  1. 1 pound carrots

  2. 4 cups water (or vegetable broth)

  3. salt to taste

  4. 1 tablespoon honey

  5. 1/4 cup cream

  6. 1 tablespoon butter

  7. pinch of nutmeg

  8. 1/4 cup chopped almonds

What To Do

  • Wash and cut the carrots, and put them in a pot

  • Add the water and salt

  • Bring to a boil, then lower the heat

  • Cover the pot, and simmer the soup for 30 minutes

  • Then turn off the heat, and let the soup cool slightly

  • After cooling, pour the soup into a blender and add the honey, cream, butter, and nutmeg

  • Blend

  • Return the soup to the pot and heat before eating

  • Serve topped with chopped almonds  (Serves 4)
