Banana Nut French Toast

What You'll Need

  1. 2 Eggs

  2. 1/2 cup nonfat milk (or soy milk)

  3. 1 teaspoon cinnamon

  4. 4 slices whole-wheat or cinnamon raisin bread, cut in half diagonally

  5. 2 bananas, chopped into small pieces

  6. 1/4 cup chopped almonds

  7. Maple syrup or applesauce

  8. Vegetable cooking spray

What To Do

  • In a medium mixing bowl, whisk the eggs until foamy

  • Add the milk and cinnamon and stir

  • Spread the chopped almonds onto a plate and set aside

  • Lightly coat a large frying pan with cooking spray and place over medium heat

  • Dip each bread slice in the wet ingredients, coating both sides, then coat each side with nuts

  • Place bread in the frying pan.  Cook until underside is golden brown.  Gently flip the bread.  Firmly place banana pieces on top of each piece of bread and continue cooking until other side is golden brown

  • Serve with a drizzle of syrup and/or applesauce
